Service Design for a Small Restaurant: Based on Personas

초록

This study examines service operations of a small restaurant by using service design tool, personas in discovery and define stages of Double Diamond Design Process Model. As a case study, one of the Alchon franchise in Incheon, Korea, a small restaurant around school area will be analyzed. The design tool will be applied to the service process of the Korean style snack bar, bunshik, in order to bring attention on initial idea and determine problems of the store. Through this study, effective way to use personas in real practice can be suggested and the findings can contribute to small restaurants to discover their challenges and work on them. Findings show that Alchon can improve the operations by improving the visibility of its menu, creating more tables for a guest visits alone, delegating the servers’ duties and responsibilities, and keeping the place more sanitary.
