This era of green chemistry has compelled the scientific community to explore the use of novel solvents to extract food-derived biomacromolecules with the aim of replacing toxic and potentially hazardous solvents. Recently, deep eutectic solvents (DESs) have garnered significant attention due to their biodegradabilities, low toxicities, and remarkable abilities to extract biomacromolecules. However, no comprehensive assessment of the use of DESs for extracting biomacromolecules from food has been performed. In this comprehensive review, we focused on research efforts involving the utilization of DESs for the extraction of food-derived biomacromolecules, such as proteins, polysaccharides, and nucleic acids. In addition, we delve into the background and characteristics of DESs and their advantages and limitations in the context of biomacromolecule extraction from food sources and provide prospective directions for future development.
