Antimicrobial activity and production condition of bacteriocin produced by Enterococcus faecalis CBT SL-5

초록

Lactic acid bacteria strain CBT SL-5 showing antimicrobial activity against pathogens such as Bacillus cereus, Staphylococcus aureus and Propionibacterium acnes was identified to Enterococcus faecalis by 16S rRNA sequencing. Enterococcus faecalis CBT SL-5 showed assimilation characteristics of 18 sugar substrates. Because antimicrobial activity of culture broth was inactivated by heat and protease treatment, it is suggested that antimicrobial activity of CBT SL-5 strain is by bacteriocin activity. Production of antimicrobial activity was sensitive to pH condition of culture medium. In culture using optimized medium, CBT SL5 strain produced maximum activity(12800 AU/mL) at pH 6.0.
