Structure and Properties of Biodegradable Gluten Compounds

초록

Wheat gluten is entirely biodegradable and relatively inexpensive compared with other biodegradable ingredients. Wheat gluten has a protein content of about 75-80% on a dry basis and most of this protein consists of gliadin and glutenin. Gluten molecules have structure fixed by hydrogen and S-S bonds. However, by the addition of a plasticizer this bonds are unfolded and the gluten exhibits a thermoplastic property. Effort in this work have focused on the utilization of wheat gluten to develop ingredient combinations and to identify compounding conditions for making gluten-based aliphatic polyester composites. Plasticizers such as low molecular weight polyols were applied in some formulations to enhance the processibility of gluten. The resulting biodegradable plastics demonstrated better physical properties than those of the starch-based plastics.
