Fixed shelf-life is a significant difference between fresh processed products and primary fresh products. In order to reveal the rule of deeay of fresh processed products in circulation and the influence on consumption demand, on the background of a two-echelon cold chain System composed of a third-party logistics distribution center and a retailer, considering the decay characteristics of fresh processed products and their raw materials, the perception freshness function of fresh processed products and the quantity loss function of raw materials are proposed, in which the perception freshness is affected by both the time and the shelf life of the products. Based on the demonstration of the rationality of the proposed functions, a Joint decision-making model of inventory and pricing of the two-echelon cold chain is established, in which the perception freshness and the price jointly affect the demand. From the perspective of the two-stage pricing of the retailer, the problem of Joint decision-making of inventory and pricing under the condition of the maximum average profit of cold chain is solved by GA. At last, as a Simulation example, the fresh-cut fruits and vegetables sold in a supermarket are simulated to verify the feasibility of the model. The result of sensitivity analysis shows that (1) Different from the traditional concept, under the premise of fixed replenishment cycle, when operating products with long shelf life, the retailer can maintain higher cold chain profit by reducing price in advance and small discount. At this time, the profit growth of the retailer is higher than that of the distribution center. (2) In the case of the variable replenishment cycle, when operating products whose replenishment cycle is a small proportion of the shelf life, the cold chain profit could be maintained by means of early price reduction and large discount. (3) When the ratio of the replenishment cycle to the shelf -life of the products is increased to a certain extent, the internal revenue of the cold chain System will be seriously unbalanced. The analysis on the characteristics of decay of fresh processed products can provide a new idea for the theoretical study of the decay characteristics of fresh processed products. © 2020 Editorial Department of Journal of Highway and Transportation Research and Development.
